Restricting certain workflow actions to a user group

I have a project starting in a few weeks where our client would like access to our JIRA Sprint board to be able to review Issues as part of the workflow. However, I'd like to only allow their user group to perform certain transitions so they can only edit states in a certain part of the workflow. Any ideas if this is even possible?

Yes, you put "conditions" on the transitions to allow only certain groups to use the transitions.

You can also use "workflow properties" to block actions (like comment or edit) when an issue is in a particular status in the workflow.
