I have noticed in my project that moving a ticket into Review also changes the Resolution field to Done, which is not correct. Can I change this? or fix this?
It sounds like you have a post function in the workflow that sets the resolution. You can change that if you edit your workflow and remove that post function.

there are two option : or a workflow post function in trasition that moves ticket to Review or some type of Automation.
Please verify on your hand with a JIRA Admin.

You might also have put the resolution field on a screen that the transition uses. This will also resolve the issue, as the resolution can't be left empty on any screen that amends an issue.
