what are the options to have Releases across different Jira projects ? Any way we can combine tickets from several projects in the same Release ?

Here is an possible solution.
1. Add a release with the same (e.g. "Release 1.0") name to all the projects
2. Assign the issues from all the projects to release by setting the Fix Version field to your release ("Release 1.0")
3. Create and save a filter that returns the issues from your release. As you can see in my example below, the filter returns the issues from multiple projects.
4. Create a new agile board based on this filter - name it Cross-Project Board
5. Do you planning normally. For example, you can create a sprints that include issues from different projects
You can track your sprint and release by using the available Jira gadgets and reports; they might be enough for your needs, although, in this context, you might need for example an overall burn-down chart for your cross-project release with ETA. If so, please let me know and I will provide more details.
