What you are trying to achieve does make sense, absolutely. However, the concept of quick filters is designed to be flexible enough to filter on - well - virtually anything. You could have one filter to search by assignee and another one to search by due date and e.g. one more to filter by component.
As such, they are designed to be used in a cumulative fashion. Each time you activate another quick filter, it is joined with other active filters with an AND operator between them.
The unfortunate side effect is that you have to deselect previously applied filters when you want to change your criteria.
Maybe not what you were hoping for, but I hope it creates some additional context on how this is designed.
