Hi, all my projects are labeled as "software project"
is there a way to rename this and make it custom or match my categories?

That is not a label, it is describing the project type (the other types you might see are Service Management, Work Management, and Product Discovery)
There is a project category field though, you can see it in the project list. For example
You'll need an admin to set up the categories and put projects into them.
