One of the projects added under NextGen software but when viewed for the permission change, the project name not displayed.
Other projects are created under Classic software

This is expected behavior, next-gen projects do not have permission schemes, they only have 3 access levels (open, limited, and private).

I appreciate your reply.
So are you like suggesting me to recreate the project under the Classic Jira.
If then please let me know which are the permissions to grant and deny in order to restrict a user from viewing or having access to other projects. Users only added to the respective project can view/ access the projects linked with them.
Please help since I am naive in terms of Jira management.

So if you want to control who can view and access a next-gen project you have to set the access level to private, you then control who have access to it via the three project roles that are available for next-gen (administrator, member, and viewer). You can find more information about this here, Manage how people access your next-gen project.
If you want to have more granular control over what users can do then yes, I would recommend that you migrate your next-gen project to a classic project. The way to do that is to create a new classic project, then use bulk move to move the issues over to the new project. You will find the bulk move when you go to Filter > Advanced issue search and click the ellipsis in the upper right hand corner.
And if you do not want your users to create next-gen projects in the future, you can remove that feature by going to Global permissions and change which groups have access to "Create next-gen projects".
