In our cloud-based, company-managed project we are having problems creating sub-tasks in Stories and Epics. When we create a Story or an Epic we cannot update the Epic Link field. Other projects within our Jira site do not have a problem creating a sub-task so it must be a configuration problem within our project as opposed to a product issue.
Any ideas on what may need to be amended to solve this problem?
You'll need to remove the epic-link field from the create and edit screen for this type of issue in this project.

Unfortunately not John, we decided to keep the Epic Link field for our project

If you are trying to add an Epic Link to the sub-task directly, that's not possible. Is that what you were trying to solve?

Can you provide more detail on your scenario?
You said "when we create a story we cannot update the Epic Link field". What exactly happens? Is the field not present in the Story. Is the field not editable? Do you get an error when you update the value and then try to save the issue? Is this only during Create Issue, or can you also not edit the value for existing Stories?
You said "when we create an Epic we cannot update the Epic Link field". The Epic Link field is not a field that should be part of the Epic issue. Epic Link is applicable only to the issues types that could be a child of the Epic, such as Story and Bug issues. An Epic cannot be a child of another Epic, so you shouldn't be trying to edit the Epic Link field for an Epic issue. Are you unable to save the new Epic issues you are trying to create? What error are you getting?
Sub-task issues don't get linked directly to the Epic with the Epic Link field, because Sub-tasks are not directly Child Issues of an Epic. Are you blocked from creating Sub-tasks at all in some way?
