While raising a defect we are selecting priority and fix priority fields, where is the severity field? e.g. we have selected priority-Highest and Fix priority-Immediate. but we have not faced any field like severity.

Severity is not a built in field in JIRA.
You can ask your administrator to create this as a custom field if required.
