People field/ Watchers

When adding a name to the "people" field, are those users added as "watchers"? If not, is there a way to make them "watchers"?

people field? there is not field in called "people" that I'm aware of. Maybe this is a custom field in your instance?

People fields allow your team to insert people’s names from across your Jira site into a field on your issue view.

This is a field by Jira like labels, priority, or assignee added back in April.

"People fields" is a description of a type of field, it is not a field itself.  

Which "people fields" are you looking at?  Watchers is an free-form "people field" which allows people to add themselves, and also has some auto-watch functions.  Adding to most people fields will not add to the watchers list, but you could code for it.
