OAuth Jira Scopes internal error

Those new to the Atlassian Community have posted less than three times. Give them a warm welcome!
When trying to do OAuth with any of the Jira scopes, the authentication fails with a 500 internal server error. Scopes like read:me do work.
Thing's we've tried:
- Enabling all possible Jira permissions and scopes (doesn't work)
- Not using any Jira scopes (works)
