We're not able to start the sprint due to the start date and end date error. We're typing it in the suggested format but still, it doesn't work. Please assist in this regard.
What is the language setting for Jira at the Global level and what is the language setting in Personal Settings for the user encountering the problem?
There have been a few posts recently about problems where the user's language choice imposes a different format (or different spelling for months) that does not match the Global Jira setting for language, and that results in validation errors for the data.

Has your Jira Admin change the format for date/time picker fields in the Global Advanced Settings? I have tried changing my language preference to English(UK) and it did not change my date/time format, and mine does not include 'at'.
A Jira Admin could look at the format here:

I wonder if a change to the format there might be causing the issue.
I would encourage you to contact Atlassian Support directly on this issue.

Please share the error screenshot for better assistance.
In between, if you are not able to see the start sprint button, then reduce your browser zoom and you should find the "start Sprint". If this is not the case, then please share the error and screenshot.

This may be related to the internationalization issues I mentioned in my response, when the language for Jira globally and the language preference of the user do not match.

Also, try the suggested format without the double quotes on the outside and with single quotes around the word "at".
