Next gen project users, how are you managing your release workflow without statuses?

For the classic Jira, you have the option to create statuses in a column, so done = waiting for release, released to staging, released to prod. 

We have a problem with work piling up in a waiting for release column and then not being counted as 'Done' in our burnup/velocity reporting. 

How are you all handling this in the next generation projects?
