I had a problem with the burndown chart, which did not display issues correctly. I deleted sprint and created it again, with the start date in past (actual).
Unfortunately, the burndown chart shows "issue added to sprint date" as today, which gives an incorrect view of the sprint.
Is there any way to manually change dates to create an actual representation of the sprint?

No, I do not believe that is possible.
If it was possible, any sprint's data could be changed at any time. That is, the "history" would not be what happened and when it did so. This would effectively make the reporting unreliable.
Initially you noted "I had a problem with the burndown chart, which did not display issues correctly." What was the problem that led to trying to adjust the data?
