Since I can't archive projects with our current version of Jira, how do I remove or hide old projects so they're not seen on the list?

Your options unfortunately are limited. What I have done is to create a project category call archived which allows me to easily see which projects are Active in the project list. I create a archived projects scheme which basically hides the projects from everyone except the admin. However as you have noted the project will still show in various lists.
We also switch the permission scheme so only admins can access the project, but instead of category we prepend "Z_ARCHIVED " to the project name - this way it's always at the bottom of the barrel in any other pages since projects are sorted by name by default.
