With Jira Cloud I am not able anymore to have 4 levels structure wereas I was able with Jira on promise.
With Jira Cloud I can have : Epic --> Story --> Subtask
and I would like at least to have : Epic --> Story --> Task --> Subtask
The best would be to have also Substask\Subtask ...
Any advice ?

Server/DC and Cloud both have the same standard hierarchy, which is Epic > Story > Sub-Task.
If you had a modified hierarchy on Server, it'll have either been via an app or possibly through internal modification.
In Cloud your options are mainly Apps - such as Advanced Roadmaps for Jira (comes bundled with Jira Cloud Premium) or apps such as Structure for Jira.

You'd need to move the Story up to Epic-level using Advanced Roadmaps for Jira to do this. It's not something I'd advise as then Stories cannot be linked to Epics - just to levels above - but there is that option.
You'd need to look at a more flexible hierarchical app like Structure for other levels.

So could you then confirm me that there is no way to create more than 3 levels ?
If yes, when Jira plans to implement such a feature ?

As far as I know - no, not without an app.
There might be a suggestion for this in the backlog - for example, JRACLOUD-4446 or JRACLOUD-69775 which you can vote/follow to see if these are implemented in future.
Alternatively, you can look for an app on the Marketplace today which can help you advance your hierarchy.
