Am I able to create an Epic in the Timeline and have this display the accountable / assigned owner on the front screen summary, same as for tasks. Same question for status

Adding assignee and status as columns on the timeline covers it natively. If you end up wanting more than the timeline comfortably shows, several fields at once, or the same view across a lot of epics, a Marketplace app can take it further: e.g. JXL for Jira shows epics and their children as an expandable list where any field is a column, on every level, epics included, and values are editable right in the cell.
Status roll-ups per epic work there too, so you see the epic's own status next to how far its children have actually progressed.

Yes, an Epic is a normal work item with its own Assignee and Status fields, and the timeline lets you add assignee and status as inline editable columns, that applies to epic rows the same as task rows.
What's likely throwing you off is that a parent row also gets a progress bar underneath it, rolled up from the status of its child items, green/blue/grey for done/in progress/to do. That bar is separate from the epic's own status field, and with no child items under this epic yet there's nothing to roll up, so that area stays blank.
Once both are true you should see the same owner avatar and status you get on tasks.
