I'm having two releases version as 6.0 (Create board as 6.0 in Jira) and other new is release version 7.0 (Create board as 7.0 in Jira) in jira. Till now I was having 9 sprints in Release 6.0 Now I want to have new sprints under release 7.0.

Currently when i am creating sprint 1 under release 7.0 (Board 7) , it is overriding data of sprint 1 release 6. How to resolve this issue?

Use different names for the sprints, clarifying what they're for.  The problem you've got is the underlying data is shared, so when you say "sprint 1" (version x) you're looking at the same items as you when you say "sprint 1" (version y), so JIRA has no way of knowing you mean two different things.

Most of us will do things like "version 6 sprint 1", "version 7 sprint 1" to avoid that loss of information.
