Our jira projects even though they have multiple user stories per project aren't showing the tasks on the board or the backlog, it shows up empty. Is this a bug? or a downtime issue?
To everyone, this issue is already reported to Atlassian.
And yes, it's affecting a lot of users.
Currently as Atlassian respond, they are working on the fix.

For me the board is also empty (no filters), and backlog is empty as well. Anyway, there are multiple issues. see also: JIRA down? Current outages and problems

Are you sure the status use by stories are mapped to the column in the board ?

Sorry, but how can i check that? As far as i'm aware at the moment they're being shown on the list view.

From the board, you can click on the ... next to the board name, Board settings, then Layout and Columns. You should have the list of unmapped status with the number of associated work item on the left.

Atlassian has acknowledged that there is an issue with the boards and their team is working on it. They are seeing some recovery already as you also appear to be seeing. If not yet, give it a little bit of time and refresh.

Same here, some spaces are not showing issues and bugs in backlog and board (with no filters) but they are visible in the "list"page

Well in https://status.atlassian.com/ there's no active incident related to this topic yet.
I checked my company software projects, and stories, tasks are visible in backlog.
As Florian asked, check if the data is being returned using JQL.
