I created an automation rule that uses the "Multiple issue events" trigger. I can see in the audit log which event triggered the rule.
Can I include this information in the email that is created in the "Send email" action?

I don't have a Jira Data Center to test available right now, but the smart value {{eventType}} should be giving you the information you need. You can also search for "eventType" in this documentation.
