Is it possible to hide fields from being available to screens based on field configuration?
I will elaborate: I have a project administrator that does not want to see all 200+ custom fields on JIRA when he edits his project's screens, only the fields applicable to his project. I thought this may be possible by hiding the applicable fields in the associated field configuration... But this doesn't seem to be the case. Although the fields are hidden in the field configuration, they still all appear as available to the screen when editing a screen's fields.
Is there a way this can be done?

Can you please confirm to us if you are meaning the fields that appear when editing an issue or when you are editing a screen in the project?
The option in the Field configuration can hide the fields when you are editing an issue, however, there's no way to hide the fields when editing the screens of a project.
In fact, If you are talking about the screens of the project itself, I would like to better understand why would you like to hide the fields on project's screens instead of removing them from the field configuration (Using a dedicated one for the admin's project). Would it be in a user based where some would be able to see the fields while others don't?
My recommendation to better organize it and let your Admins easily find the relevant fields would be to split the fields into tabs and categorize it, displaying the relevant fields on each tab for each group of users. as you can see in the screenshot below:

I am referring to editing a screen in the project.
In the screenshot above, I would like to remove various fields from being available in the drop-down list such as the ones highlighted in yellow, which are not applicable to the project.
