Quick question. Is there any way to send a copy of Jira feedback/request to sender after submission?

The issue collector is setup to get issues into Jira. Issue notifications are still handled in the Jira application. Even though the issue collector will collect the name and email of the individual submitting the request it does not have anyway to notify that individual and there is no way to configure it to do so.
I would suggest looking at Jira Service Management if you would like to have emails go out to an individual submitting a request.
Via automation it is possible to send e-mails to the submitter but only if the email field is a custom field. The email field from the issue collector is always written in the description field and so not evaluable for smart values in the automation.
