Is there a way to track in jira for specific days weekly, Thursday - following Wednesday? like Nov 3 - Nov 9 then Nov 10 to Nov 16 etc.

Track tickets. Like tickets created weekly from Thursday to the following Wednesday each week.

I'm sorry, but that doesn't help.  JIRA is an issue tracker at its heart.  It tracks issues already.

Could you explain what "track tickets" means to you?
