Is there a way to see what data a ticket was initially created with?

I know the work history shows all changes made to a specific ticket, but it does not show what data it was initially created with.

Annoyingly, no, you have to read back through the history to work the first change to a field (if any) and then read its "from" value.

Sounds like an opportunity for a marketplace vendor to build a "time machine" for cloud...there are equivalent marketplace products for JIRA server and Confluence.
