I'm currently trying to overhaul one of our boards to better fit the team's workflow now that we've got a bit of experience in Jira under our belts. Something that would be of huge benefit to us would be to be able to select which work item type displayed which plugin/app.
Is there a way to do this?

There’s no native Jira Cloud feature that allows “per issue type plugin visibility” for entire apps.
If this feature is critical to your workflow, I’d recommend checking with the plugin vendor’s documentation or raising a feature request.
Most of the plugin vendors provide insights about plugin usage detail. Check if that is what you are looking for.
@Liam Ashton There is a mechanism called "app access rule" that may help with your use case.
You can use it to prevent certain apps access certain Jira projects. As far as I remember the unit here is the "project", not a "work item type", but you could remove the unwanted apps from complete Jira projects using these.
