I'd like to customize the column headers when exporting using Export of all fields.
I cannot seem to find a way to do that.
Any help would be appreciated.

If you're open to solutions from the Atlassian Marketplace, you may want to have a look at the app that my team and I are working on, JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. Tables in JXL are fully customisable: Not only can you control which fields are shown, you can also change the column heading as well as the column header content and background colors.
Of course, these settings are respected in JXL's Excel export, which can be done in just two clicks:
I should add that JXL can do much more than the above: From support for configurable issue hierarchies, to issue grouping by any issue field(s), sum-ups, or conditional formatting.

Hi @Glenn Gallop I don't think that's possible unfortunately.
You could solve this using the free spreadsheet view in Visor (my app).
Visor has a two-way integration with Jira, so you can create a spreadsheet view with custom headings that stays up to date with live data from Jira (rather than having to keep exporting to refresh your data).
You can also share this (live data) view with your stakeholders if needed (for free).
Here's an example in the image below, where I've just renamed the Priority field to "Priority Status - Renamed field example"
