For context - I work on a team that does contract negotiations and we use JSM to process our requests from within the business. Because its an ongoing stream of "customer" requests we use the kanban method (rather than scrum) to keep track of our workflows.
We're now deploying WIP limits to thinks that we pull into progress, but "number of requests" doesn't give the whole picture as some requests are very simple and only take a day or so while others are complex and can take months to years. To get a better view of our capacity we ultimately would like to set our WIP to total story points (rather than total requests), but at a minimum would like to at least see or track total story points by status somewhere.
Any thoughts on how to do this? Thanks, y'all!
No this can't be done.
You can add the story points field to the screens and show that field on the cards on the kanban board.
Even the ootb dashboard gadget can't achieve this, you would need a marketplace app to enhance dash boarding options.

...the document talks about sizing the work items consistently, so it seems like their take on WIP limits is based on all work items have the same size/estimate, and that is why they use work items counts for the WIP limits.

Interesting. I suppose these tools are built for software project management but it is a bummer that Jira doesn't take enabling teams into consideration if the end-all goal is to have the entire organization on one work management platform (which, IMHO, is ideal).

I don't see anything in Atlassian's public backlog on this topic, but you might want to provide feedback to them about it.
You should find a Feedback option under the Help button in Jira, and you can use that to submit feedback/suggestions directly to Atlassian.
