I found partial lists of fields and descriptions but am looking for a list of all available fields.

Welcome to Atlassian Community!
You can see all the fields that are available for your instance if you go to Project settings > Issue types and then click Field configuration. This list will show both custom fields and system fields, and the description added to the fields.
