Is there ONE document that describes how to create custom field configurations and add to project?

I am a new user and need to create a new screen scheme with custom fields and then associate that back to the existing project.  

Is there a document that doesn't jump all over the place?  I am looking for a logical flow doc...step 1 do this, step 2 do this etc.

I am using a test project to ensure I don't disrupt the existing project, but am having a difficult time finding documents that flow in logical order.
