I am afraid that I have made to many uneducated changes and would like everything reset to defaults but I am in active sprint cycles....yikes!

If i understand you right, you want to reset just the configuration but not the data/issues in your cloud site.
As far as I know, this is not possible. If you would be able to just the configuration, all issues might be have to be changed, because of that change and you would have to decide for each case, what's correct. So it doesn't make sense to have something like that. But you could reset the whole site, but then your data is also lost.
Ok, how do you reset the entire site? We are only in Sprint-2 so it might be possible for me to reset the site and re-enter backlog items before Sprint-3.

You have to delete the Jira product from your subscription and then add it again.
