Is there any way to prevent users from resolving an issue (moved to resolved), if sprint field is empty.

Add a condition to the workflow for "sprint is not empty". 

I'm not sure you can do it in plain JIRA, but if you add the JIRA Suite Utilities add-on, you should find it can check for the field.
