We have multiple teams working on different functional areas.. We plan to set up each area as a project in JIRA to manage it better. Now, we need to plan for a release, and the release will be common across multiple functional areas. Thus, in JIRA we need to set up a release that will span across multiple projects. How can we achieve this?

Atalssian offers a couple of solutions there.
Versions are project level item, not global. You can use versions of the same name in different projects, but they will remain separate objects.
Portfolio has some functions for handling global releases.
