Is it possible to create security scheme at field level?
I am creating a recruitment project in Jira where some of the fields (like Expected salary) I want to hide from certain group of Jira users in my Jira instance.

You would need an app to enable a field security functionality.
What I have seen - and if this makes sense for you is entirely depending on the use cases you are building that project for:
- issuetype A which represents recruitment activity (with less restrictive access) - issuetype B which represents the candidate profile (which contains all the confidential information and thus more restrictive access via issue security) - of course you could also put this information in another system like confluence which offers more permission options - issue links connect both issue types
