Is it possible to create custom status for a version in JIRA ?

I can see in the test project at https://jira.atlassian.com/projects/TST/summary that a version can be unreleased or released. I was wondering if there is a way to add additional status to a version (In validation, delivered for acceptancy, etc.).

No, I'm afraid the unreleased, released, archived set is pretty much hard coded.  You'd need to rewrite the core code that provides it.
