Is it possible to create a sub-story? Or even a parent story?

for example, we have a hierarchy of Epic > Story > Task > Sub-Task...

Can I create something which is Epic > Story > Sub-Story? I do not want to create a sub-task or even a regular task. An alternative would be if it is possible to create a parent story, which I can link other stories to.

There is only possibility that create one new sub-task and called it as Sub-Story

If I create a sub-task to a story, and then amend the due-date of that sub-task, will the stories end date update automatically? Or do I need a script runner?

Yes, you will need scripts or automation to do that.
