Greetings. Ok, I have a project with 2 incoming mail servers. The notification scheme is set to assign the incoming email notification to the assignee by default. However all incoming emails are defaulting to 1 person... the project lead. Is this a fail safe? If there's no actual reporter does the email default to the project lead?
Apologies for the confusion. This would be for incoming emails. An incoming email to the ABC project triggers a notification to the PM.
Do not mix up incoming mail and notifications. Notification schemes have nothing to do with incoming emails, they send mail out in response to things happening in Jira (possibly including incoming emails creating comments or issues, but that's still not any direct relationship with incoming email)
Incoming email is looked at by email handlers. If you have more than one inbox, then you need at least one handler per inbox (you can have single inboxes with many folders, but you'll then need a handler for each folder)
To me, it sounds like you've only got one handler, and it's set to assign to the project lead.

Hey Nic. I actually have two mail handlers that seem to be defaulting to the project lead. She doesn't want to be notified for every single thing. Is there a way to change the default setting for the mail handler?

Again, you need to separate out notifications (outgoing email) from handlers (incoming email)
It is now unclear what you're looking at - are you trying to configure the incoming emails, or the outgoing notifications? Can we look at one at a time?
