My JIRA version is cloud. In my sandbox, there is no "field configurations" and "field configurations schemes" Does anyone can tell me why?

This is happening because Jira is transitioning to New Field Schemes - More on that here: https://community.atlassian.com/forums/Jira-Cloud-Admins-articles/Announcing-General-Availability-of-Field-Schemes/ba-p/3246894
This progressive rollout of the new Field Schemes has already reached your sandbox, but not your production. That is the reason why your sandbox has "Field Schemes" while your production still has "Field Configuration Schemes"

@Adithya Ramesh My organization has this exact same problem: the sandbox shows the update, but not my production instance. Do you know when the change will roll over to production? Can I trigger the change myself? It has become confusing because configuring the fields and field schemes in sandbox is now much easier, but I cannot do the same in production until the update occurs.

The change will automatically land in your production sometime before the end of the month. However, if you want to, you can manually trigger the change by navigating to <sitename>/jira/settings/issues/field-configuration/enable-field-scheme
Where you'll see a button to kick-start the process. Hope this helps!
