As far as I know, after the project is deleted, all the issues, components, and versions under the project will be lost, and the workflow and screen scheme will not be deleted. You can find them in the system setting-->issues.

Deleting a project doesn't delete the associated workflows / screens.

Actually, currently it's an open request to be able to do so
