What percentage field are you wanting to use? Is this a custom field? What is the exact use case/scenario you are wanting to see?

Which client has more tickets should be easy - create a filter with all of the tickets. Then create a dashboard with an Issue Statistics gadget (or even a Pie Chart). Use the Client field as the Statistic (this assumes the Client field is a dropdown with your clients in it and not a Text field.
