I need to understand the relationship between the Product, Instance and Project in JIRA.
Is it Instance -> Product -> Project or
Is it Product -> Instance - Project
Do we have settings per each. Its quiet confusing
The only term in your list that truly exists in Jira is Project.

Instance generally refers to the installation of your Jira. In cloud it would be the applications installed n your VM.
Products are often represented as Projects n Jira.
Projects are the entities that gather your issues into a container that has various attributes and behaviors.
Jira doesn't have a technical implementation of "product", that's something you have to define and represent in Jira for yourself. Normally we see "product" as "the thing you are building with the help of Jira", but there's no real standard way to represent that in Jira - some people find it best to have a single project for all product activity, some have two (support and development are separated), some divide the product up across teams or projects along all sorts of dividing lines because that works best for them.
"Instance" is similar. We usually see the word "instance" meaning "a system separate to others" and use it in sentences like "the client has three instances of Jira on the same version but with different sets of users"
A project is a container for issues, and the place you hang most of the configuration for how the issues will work in the project.
I think you need to explain what an "instance" and a "product" are to you, then we might be able to suggest a good way to represent them in your Jira.
