I would like the child issues I've setup with my stories to show as separate items on my active sprint board (as sub-tasks do).
I need the separate child issues to be able to be moved to different stages on the board, even if the stories they form part of is in a different stage on the board.
Anyone have some advice for me?
What do you mean by "child issues" of stories? Do you mean other sub-task types or something else?
I believe that sub-task types of stories are the only issue types which have the built-in behavior you describe, moving on the board independently of their parent story.
For company-managed projects, something like this is possible with swim lanes, such as for epics/stories.

The board I am using doesn't offer me the option of sub-tasks, only child issues. Does this perhaps means I will need to create a new board and recreate my child issues as sub-tasks?

Have just checked and it would appear that Im able to achieve what I need when the board is company-managed not team-managed (both Scrum).
I do believe this is the solution to my issue.
