I have a question because I don't why the developpment field isn't display on some project.

However, the developpment field is set on my issue screen.

Could you please help me ?

Welcome to the Atlassian Community!

The development panel is only supposed to be displayed in Jira Software project if an integration with development tools has been configured and if you have the View development tools permission.

Now, before going any further, can you please make sure that:

1. The projects not showing the dev panel are Jira Software projects
2. You are part of the 'developers' project role or any other role or group that grants the View development tools permission for those projects

Also, please review below documentation pages to confirm everything has been well configured:

• Configuring development tools

In case this won't help, it might be a good idea to open a support request using below link so that the assigned suppor engineer can connect to your Jira site and check what is happening:
