I have a complicated workflow where we may be code complete but we have additional steps in our workflow (reminders for release notes, etc).
I have updated my workflow statuses to be 'done' for every column after our merge (~3 more columns), but, it won't accurately show me that those stories have been complete in my burn down. What am I doing wrong?

What type of Space does this concern? Is it Team-managed or Company-managed?
Is this for a Kanban board or a Scrum board?
For a Scrum board the items are considered "complete" only if they are in the right-most column of the board. They will only "burndown" if they are considered "complete".
To have items burndown based on three statuses, all those statuses have to be mapped to the right-most column.

Jira’s sprint burndown considers issues as done only when they are in the last (right-most) column of the agile board.
To accommodate different workflows, you can look on the Atlassian Marketplace for an app that supports burndown charts based on custom statuses.
If you’re open to trying a plugin, our Great Gadgets app allows you to choose which statuses should be treated as done. For example, its Sprint Burndown Burnup Chart gadget offers settings for specifying custom statuses as your definition of "done":
And it will display the burndown accoridngly:
The gadget can display a Data tab with a sprint report similar to the one from Jira.
