Welcome to the Atlassian Community!

You can use the "move" option (in the actions menu) to move the issue.  Issue type is a structural thing, so Jira needs to ask or warn you about a couple of things when you want to change the type, hence the need to "move" rather than "edit".

The move function will ask you about project and issue type before it goes on to ask about the issue data.  You don't have to change the project, in this case, just select "story" instead of "epic"
