When importing issue from CSV following the above procedure , "Issue Type" can not be selected at "Jira field" on "Map fields" screen. "Issue Type" is not displayed.
How to set it? My account is not an administer.

AS you are not Jira admin that why you are not able to see the issue type field
Reason - While importing CSV file new issue type also being created and only jira admin has right to create new issue type that why this field not not available for normal user.
When you will import the csv file without the issue type then default issue type will be associated with those issue.

I'm actually a JIRA admin (and Org Admin right)... still, i do not have the possibility to map the Issuetype field.
Do you have an idea of what could be the reason ?

Importing issues from csv file, basically, could create a new issue type during import. Because you are not an admin, this field doesn't not appear in your map.
A JIRA admin can map issue type column during import, a not JIRA Admin can't do that.
