We got some issues tickets deleted, we only want to restore these tickets in one project without restore whole site. Is that possible and how?

Unfortunately, Jira doesn’t provide a native functionality that allows restoring deleted issues. Once it is deleted, it’s permanently removed from the project and can't be restored selectively by the project. Only a full backup is possible.
However, as an alternative option, I can recommend trying Issue History for Jira app from my team.
Using such an app, you will be able to do the following:
Track every change in your issues, including deletions.
Use filters by project, issue type, or user, so you’ll see exactly which tickets were removed in that one project.
Export the reports in Excel, CSV, or PDF formats.
After installing Issue History for Jira and enabling the deleted issues tracking option, you can filter by project, date range, or user, and view the list of deleted issues. In the example below, I chose the DEVS department and the date range this week:
It is possible to restore all the issues from the list received or only the specific ones easily:
This way, you don’t need to restore the whole site.

In Jira cloud, once an issue is deleted, it is permanently removed from the instance and cannot be restored. However, if you have archived the issue, you can restore it from Archived work items.
