When I go to the list of my projects, I have projects with the type "Software" selected by default.
Each time you need to clear it to display the full list:
I will not say that this is a serious problem, you can live with it. But still, maybe you can somehow disable this filter?

Testing on my local free site, I wasn’t able to replicate this behavior.
Can you please test by going to Cog icon > Projects? Although you can access the projects using the Projects menu, as an administrator, the best option is to use the other menu.
Is it happening to the other 3 users on your site?
Can you go to Cog icon > User management and add the default groups from Jira Software, Jira Core, and jira-administrators to your profile? I can see that currently, you are part of the group site-admin only.

If I understand you correctly, should I make the following groups have the label " DEFAULT ACCESS GROUP":
- jira-software-users (already has)
- jira-administrators (doesn't have at the moment)
- jira-core (I don't see such a group)
If it is possible, could you write how your groups are configured so that I can just repeat it?

I tested on a brand new site and found what is happening. Please, let me know if it’s the same steps you are following. If that’s the case, it’s not related to groups. I’m sorry for the misunderstanding.
When we click on “Switch to” and select the product, it will filter by default only projects related to that product.
So, if you select Jira Software, it will show only Software projects. It’s possible to create business projects without having Jira Core itself because it’s included with Jira Software, but since you select Jira Software, it won’t show other types of projects.
In this case, the best option is to use the Projects > View all projects or Cog icon > Projects.
