Are you using a third party app to get test tracking functionality? If so, which one? When we know which one you are using then we can offer advice relevant to that app.
If you have used native functionality to create a Test type of work item then you Jira Administrators can add more work item statuses that can be used in the workflow for that work item type at their discretion.
