Version is JIRA's equivalent of releases. When you see the "release" action, it is done on the JIRA version.
A project admin can create the versions. Users will see those versions in their scrum boards and while editing a story.
You can also create a release and move the stories to it directly from a Kanban board.

The Jira tool has changed quite a bit since this was first answered.
There are a few different ways to create a Jira release, or milestone, or version, or whatever you want to call it.
DIRECTLY FROM THE KANBAN BOARD
The easiest? Do it right from Jira's Kanban board and everything in the Done column gets cleared out and goes into the release. Here's a video outlining how to do exactly that:

A better way is to create a release from the Releases tab of your Jira Scrum or Kanban Board, plan the dates and give a description. This video outlines exactly how to do that:
