You can use our plugin Agile Board Filter and do it without Quick Filters & JQL

You add the JQL to identify/exclude your version into the quickfilter definition.

I suspect there's a deeper question here though - could you explain more?

Depends on what you're looking for.  The basic really is:

version = "name of version"
