How to create XML backup before changing to simplified workflow?

We are using the OnDemand solution.

we would like to switch to the simplified workflow in one of our projects. Before doing this we are warnedthat we should contact an administrator to create an XML backup of our data before continuing.

I thought that you took care of that since we are using the OnDemand solution.

But if you are not doing this: How do we create an XML backup?

this is not the official Atlassian Support, just a user forum (although there's quite a lot of Atlassian folks around here). I think you should raise a ticket at the support site.

Actually, you can create the full backup yourself using OnDemand, and that will be the response from Support. A quick Google search returns the landing page for OnDemand backups and exports; you should be able to get everything you need from here.
